Who we are and where we are.
Alex & Eder
United by their passion for Spanish cuisine, they've shaped La Vara into a celebrated dining spot. Every dish embodies the essence of 'comida casera'—heartwarming, homemade cooking that speaks to the soul. Through meticulous curation and heartfelt hospitality, they've created a space where guests savor the comfort and authenticity of Spanish home-style cooking.
Txikito
Txikito, our love letter to the Basque country, captures the many ways, from high cuisine to home cooking, that food is celebrated in the region. Opened in 2008 and reopened in 2022, Txikito honors its own tradition of playfully recasting Basque classics in a convivial and warm atmosphere that is uniquely New York.
Saint Julivert
Saint Julivert, our petite fisherie and wine bar, draws inspiration from coastal ingredients and seaside wine regions from across the world. Chef Alex and Eder's trademark innovative and creative cooking cleverly incorporates multiple cultural references into a seafood centric menu that defies categorization. Opened in 2018, Saint Julivert is a neighborhood jewel, quietly located just steps away from La Vara.
